The origin of Texas Barbecue

The hard-working immigrants from Central Texas opened small meat markets and grocery stores in the mid-1800s. At first, they didn’t have many customers, and they were to smoke the leftover meat to preserve it. The slow-cooking process deteriorated the quality of the meat, making it a cheap option. Despite the meat’s poor quality, it became popular among the cotton pickers and cowboys since they bought their meals from grocery stores. Travis started a Dickey’s Barbecue Pit in Dallas, Texas, in 1941. The restaurant’s original menu was beer, sodas, bottled milk, barbecue beans, pit hams, potato chips, and beef brisket. Together with his wife, Ollie Dickey operated the business for more than two decades.

In 1967, the pit master Travis Dickey died and left the business under the management of his wife and son T.D, who was still in college pursuing law. He started developing his recipes to compliment his father’s menu. In 1994, T.D and his brother Roland realized that the demand for their meats and sides was growing very fast.
